There was a British series in the 80s called playing Shakespeare, where members of the Royal Shakespeare Company went through different plays and scenes talking about how to approach the various scenes. It included actors like Patrick Stewart, Judy Dench, and Ian McKellen. There's a playlist of episodes on YouTube. It's very interesting, and a great time capsule.

Oh yes — the BBC interviews that came with the Hollow Crown cycle for the 400th anniversary (all those Henrys!) in 2012 are great for this too — actors like Jacobi and Tom Hiddleston talking about Henry Vs St Crispins Day speech was particularly great
