Also, some colleges! Companies like Aramark provide food services to correctional facilities and use that expertise for universities, like my college, where I'm finishing grad school and occasionally lecturing. Prison industrial complex is a whole thing.

Colorado State University which established a Prison Agricultural Lab and Geospatial Centroid, published a recent report "Growing Chains." "Prison agriculture has long been fundamental to shoring up white economic and political power and managing manufactured conditions of poverty and landlessness through the criminalization of poor and Black communities after the abolishment of chattel slavery."
